I have been gluten-free since December 2009. Prior to that I'd been unwell for years - massive acid reflux, daily diarrhea and fatigue that was crushing. Then I was diagnosed with celiac disease, immediately went gluten free and began to feel better - but not quite as
much better as I had hoped. The reflux went pretty much immediately and is now the fastest way for me to be aware I have been accidentally glutened. But the bowel issues remain and though the fatigue
has improved (no more Nana-naps in the afternoons), it is still there. So I've been doing a lot of reading. Finding out about different ways of eating, things (more things) I should be avoiding. Like sugar for instance. I used to have a really sweet-tooth, but now, not so much.
However - giving up sugar completely? - really,
really hard...
Edmond's Cookbook Chocolate Fudge
1/2 cup milk
2 cups sugar
25g (1 oz) butter
1 tbsp cocoa powder
vanilla essence - to taste
Put milk, sugar, butter and cocoa powder into a pot and bring to the boil.
Boil for four minutes - this bit is important, any less it simply wont work.
Remove from heat, add vanilla.
Beat until thick and pour into a buttered dish.
Cut when set.

Hi Janet - trying again to leave a comment - has not been working? I wanted to share some information with you that might be of help in your celiac recovery. can you email me at inagawne@islandnet.com Ina :)
This fudge looks delectable. And served with black coffee....oh my.
A question for you--do you have a FB page? I ask becasue there are many pages devoted to celiac, etc. and it would be a fabulous way to promote your blog. If you don't want to join FB, I would be THRILLED to promote your blog from my page, saying that "I have a friend with a great blog devoted to the gluten-free lifestyle, etc.
Also, I am putting your link up top on mine for a while.
